UNCLE ZORBA’S GREEK FOOD
Uncle Zorba’s loves meeting the people at festivals and the satisfaction he receives from watching them enjoy good, Greek food that, he said, is healthy because it’s grilled and not fried. His team, working about 15 hours a day, prepares 500 pounds of chicken tenders and 150 pounds of beef, along with lamb and pork for the dishes they sell. The most popular concoction, Kyriakos said, is the “gyros,” (pronounced eee-ro), a flat bread sandwich filled with lettuce, tomatoes, onions, and of course, the meat topped with a creamy yogurt sauce. It’s then rolled and wrapped in foil to be served.
